  • Throughout the world, hunger and malnutrition are responsible for nearly half the deaths of children under age 5, with deficiencies in protein, vitamins, and minerals also resulting in illness, limits on development, or stunted growth. Aside from debilitating illnesses, some 12 million children in the United States grow up in what are termed food-insecure households, where calories may be adequate but diet quality has suffered (Andrews, Nord, Bickel, & Carlson, 2000).
